Recently got caught in some rain and it turned my 650 into a 325, I’ve had this issue before so I usually just change the plugs and clean out the drain but I noticed a lot of erosion and a small chip. Would this affect how my bike runs? I assume since it’s not on the thread it should seal still? But any information would be appreciated.

I can't make out the chip, unless you're referring to the drain hole? Yeah, so long as the plug is torqued to spec, there should be no leakage. That's 180+psi that is trying to get out of that hole!
I don't think you have anything to worry about. I would test and or change the Spark plug caps and fit a ,"Fender Extender",
