Ouch! Do you have any gap at all or is the bucket touching the cam?

Any possible solutions besides grinding a little material off the top of the valve stem?

Just scored two heads for 82 bucks shipped, looks like I'll have a set of heads to work some real porting work on this fall.

Smallest shim in my pack (1.20) gives just enough clearance to spin the camshaft freely.
 
There should be a spec for installed height on the valves. Grind the end to comply then shim the springs to get their tension back to where they should be.

New heads, that I have coming. ;)

Once you shave the top of the valve, you run into retainer to bucket clearance issues and the shim becomes useless. The bucket is now pushing on the retainer and you can see what problems would happen.
 
Nice work! Bike looks great. Jealous of your exhaust, both my track bikes have the older Gen1 "curve all over the place under the engine" exhaust.

For what it's worth, my street bike has a high mount and I just put the right side peg on with machined spacers and longer bolts.
