you can still run pump fuel.stock sv compression is very low,around 10.8:1.
stock valve seats are multi angle.you can push it closer to edge of valves and make narower but wont last as long.

no.valve job is when you recut valve seats to make valves seal again.while you cutting you got choice of angles,how many or full radius or blend.some will give little more power at expense of wear.
neither valve job will win you race unless you open throttle more than anybody else :)
valves sealing is important,shape of seat is not.
