A few weeks ago my low beams went, I swapped the battery, the bulbs, and the fuses are fine, connections have power and now my odometer and speedometer are down.
Considering me a rookie when it comes to mechanics would be a complement but I’m trying my hardest to figure it out without having to go to a mechanic.

Sorry to say, but it sounds like the voltage Regualtor/Rectifier failed and burnt the low beam and the gauge electronics too. This is a depressingly common failure on the gen1 SV650.

Do a quick charging voltage test. Clip a voltmeter to the battery terminals. Run the engine at 5k rpm and measure the voltage. It should be 14 to 14.5v. If you see 15v or more, then the R/R has failed and would explain the failed low beam and gauge.

If you do see > 15v, immediately stop the engine as high voltage can fry the ignition module too.

The fix is to replace the R/R with an after-market MOSFET R/R. Do not replace with a stock Suzuki R/R.
