Hoping to get some suggestions on what is recommended maintenance at this point.

I am the original owner of a 07 SV650 with just over 6K mileage. Due to a neck/back injury 3 years ago, I haven't really ridden since that time. A few times firing it up and riding around close to home.

This bike has always been stored each winter in my garage, and the first few years I was doing an oil change each Spring.

What would folks suggest at this point?

Ride it more!
But seriously, I'd change all the fluids (oil, coolant, brake fluid), fork oil too if it was never changed. New battery unless you had it on a trickle charger. Check that the air filter is clean and the air box doesn't have any critters living there. Lube the clutch and throttle cables. Check that the chain is rust free. If it's only surface rust, lube it up and see if it's gone after a longer ride. If not get a new chain. If the tires are older than 5 years, check for dry rot and tears. If you have any doubt get new tires.
If you can, replace the fuel. If not go for a long ride with at least two fill-ups in short order to thoroughly clean your fuel system. Check for any rust inside your tank first.
Then ride some more.

1. Drain the gas tank with a siphon tube and replace the gas with fresh, no ethanol gas.

2. Change the oil and filter

3. Check the tires, at 6k they may not have much or enough tread left.

4. Ask yourself: If I really have injured my spine seriously in the past, do I want to subject that spine, which has to last till I am dead, to motorcycling? Because, motorcycling can be pretty tough on the spine, even the SV650 which has good forward lean.

That's it. Maybe you can replace motorcycling with another hobby that is less rough on the spine.

I know this is not what you want to hear though. I understand.

someone mentions that the tires may or may not be ok. I disagree if they're original.

12+ year old tires are just asking for a crash.

But the Dunlop Sportmax tires that came stock on a '07 were probably the greatest tire ever made!

Not really... Consider them equivalent to accurately pictured wagon wheel.

I can’t help thinking the main thing your bike needs is to be ridden a lot - it seems to do these bikes good. My K6 SV650S has covered 135,000 miles, doesn’t use any oil, is still pretty quiet and runs really well - so I conclude you just need to do another 129,000 miles in the next 2 years and your bike will be fine.
