Dang...that's toasty compared to my '03. Like you, I'm between 180-190 and might hit 195-198 at a prolonged stop but the only time I saw higher was on a 100+ degree day on the tarmac at an MSF advanced class. Mine hit 215 and the fan kicks on and she never gets any hotter.

How's your coolant level and condition? Mine OEM and it looks good but I'm getting ready to change it out.

Seems a bit hot. Mine runs between 180-190. Once (& I mean once) when stuck in traffic on an August day it hit 210-215 & then the fan kicked on. I think that's the only time I've heard the fan in the 3 years I've owned it. To be on the safe side you might want to give your cooling system a once over, check coolant level or replace, check the fans power connection & maybe the thermostat.

I guess it depends on what you mean by "up to 225." Mine would reach that in Texas on fairly common occasions, but only in heavy traffic. You don't want to let it get too much higher, especially not for extended periods. I still don't think it's much to worry about, however.

It's never a bad idea to check everything, as the others have said.
